I had my first taste of Pisco four decades ago, and I make cocktails using classic and modern techniques. These drinks are inspired by the cocktail culture in Lima, San Francisco, New Orleans, London, Hong Kong, and Tokyo. I also launched The Pisco Society to promote Pisco education through tastings and talks.
